Gingerly delight

First off, Thank you again for all the votes! In my mind I had 20 set at my min for a video... but you guys seem enthusiastic enough, I'll let you vote until tomorrow night (Sunday) at 9pm and then I'll let you know the results!

Today was a great day- I did a LOT, as I usually do on Saturdays! I woke up, made breakfast and chatted with the momma for a while- I brought some PB to my parents' so I could make some multigrain oats for brekkie! I used 1/2 cup multigrain oats cooked with 1/2 cup nonfat soy milk, 1/2 cup water, added 1 tbsp PB and a big banana, topped it with some blackberries and a drizzle of maple! I missed my oats, this was the best bowl I've had in a while!!

After a couple cups of coffee I settled down to do a bit of mid-morning reading before I decided to work out. I used the parents' treadmill to do a 40 minute walk/run- walked 10, ran 10, walked 10, ran 10!

I headed home soon after I walked and finished the Grey's Anatomy episode my mom had taped for me!
Back at home I was hungry and I could not get over my craving for an egg sandwich, so an egg sandwich it was! I full egg, 1 light laughing cow, ketchup and spinach on 2 slices honey whole wheat bread-
plus a big granny smith apple on the side!


Perfecto!

After lunch I did some work, and then Tyler and I headed to get our Christmas Tree! He's the tree expert so he picked out a lovely one for us!

It's not decorated yet because it still has to 'fall out' but we decided blue and silver ornaments would go great with our beachy decor!

For snacks I nibbled on a big date

and 1/2 cup 1% cottage cheese.


I did more work for a couple hours, and then set out to make dinner. I knew I wanted two things- a new chicken recipe, and rosemary potatoes! So while I was cooking some Alexia's rosemary/garlic/olive oil potatoes in the oven I decided on a chicken recipe- I based mine on Self.com's Ginger Lemon Chicken Skillet!
I omitted the oil and used a frozen blend of broccoli/carrots/cauliflower because that was what I had on hand- but everything else was the same, and it came out BEYOND FABULOUS! Definately making this one again, one of the best chicken recipe's I've had to date!!

I am so wiped from such a long day. I'm going to do some more organizing for finals, but that's about it. I'm pretty sure I'm settling in for an early night tonight- I have work all day tomorrow and I have to stay up late enough to pick up Nick from the airport, so I'll need my rest!!
