Snowed in

I apologize for the lack of posting today... I must admit it was laziness more than anything else!
There are currently about 4-5 inches of snow outside, Nick and I have been stuck inside all day- no birthday dinner for grandma and no fun excursions tonight!

I spent the day being lazy, watching movies, and baking cookies... oatmeal raisin walnut with chocolate chips and a brown butter icing!!! Yum!


I had two cookies today... one chocolate mid-morning...

and a hot oatmeal one out of the oven! Mmmm!

Lunch today was courtesy of Nick (well, his mom really!) we had some of the lasagna he brought home (frozen and defrosted) from Canada when we visited. It was very delicious, I had a good sized portion with some carrots on the side for some veggies.

In the afternoon I snacked on an apple...

then I decided I was still hungry so I had a hot chocolate made with no sugar added mix and 8 oz skim milk.

This kept me going until I made dinner. I didn't have any intentions of eating at the house tonight so I had to use what I had on hand. I had 1/2 lb of lean turkey left, so I made turkey burgers with the lean ground turkey, some parsley, garlic, red onion, worcestershire sauce and some breadcrumbs. They were THICK burgers...

but they came out yummy!
I had mine with some ketchup, spicy mustard and goat cheese on a whole wheat bun. On the side we had fresh pickles and some steamed broccoli.

No surprise here... we're staying in tonight!

I had planned on doing my video post today... but I chickened out with Nick videotaping me... so my sister is videotaping me tomorrow, it will be up ASAP!!

Stay tuned for more of my 52 things... but this one isn't from me... I got a bit of help on this list!

I got the recipe from allrecipes:

and I added 1/2 cup raisins with 1/2 cup walnuts.

The glaze is simple- melt 1/2 cup butter on medium heat until it browns (not burns!), take off heat and stir in 2.5-3 cups confectioners sugar and 1 tsp vanilla, add 3-4 tbsp of water until it becomes icing consistency, and drizzle on cookies!

They're really good, but they took 15 minutes in my oven; not 12 like the recipe says!
