I'm so excited to have someone to cook for again!
Last night I tried my hand at something new in the kitchen- pork tenderloin.
I used a recipe from Eating Well, Mustard-Maple Pork Tenderloin. I butterflied the filet, then rubbed it with dijon mustard, sand and pepper, pan seared it in a bit of evoo and then let it roast in the oven for a while. Then I made the mustard-maple sauce with some fresh sage, all while roasting a big pan of root vegetables- carrots, parsnips, red potatoes and sweet onion. Delicious!
I had about 4 ounces of pork and a good serving of vegetables.
Earlier that afternoon I snacked on an apple and some cottage cheese because I knew dinner was going to be late.
It's great having Nick back, this morning we went to brunch at my favorite Narragansett restaurant- Crazy Burger of course!
I woke up bright and early and had 1/2 a clif bar before going to the gym and doing 35 minutes on the elliptical, 35 minutes of arm exercises. 215 calories burned on the elliptical, 153 burned doing strength. Afterwards I showered and snacked on a date while waiting for Nick to arrive.
Breakfast was fantastic, as expected! I ordered my usual 'make your own omelet' with egg whites, goat cheese, broccoli and turkey sausage. I ate all but a couple bites, with some Crazy Burger homemade ketchup of course! On the side I substituted fruit for homefries, and ate most of that, and a couple of pieces of brioche toast I was too full to eat.
We're back home relaxing for a while, no big plans today!
