Too tired to blog!

Happy 2nd day of the year!

Sooo sorry for not blogging last night-as soon as my grandparents left my parents house last night I headed back to the south end of town, and by the time I got here I was so exhausted from staying up late the night before and spending all day in the kitchen, I decided to go right to bed!

Dinner was fabulous, I was very excited at how well it turned out! My afternoon snack consisted of about 6 kalamata olives and an olive oil soaked sundried tomato when I was prepping the salmon- no time to stop because we had an early dinner!

We started with a salad of romaine, red onion, dried cranberries, goat cheese and pine nuts. I drizzled mine with some low fat raspberry viniagrette.

For the salmon, I had been intrigued by Jenna's 'second mom' Betty's mediterranean salmon Jenna raved about on her blog, so I decided to make my own version- I coated the salmon with pesto, topped it with sundried tomatoes, kalamata olives and feta. It was delicious!
I also made rosemary couscous, made with olive oil, broth and fresh rosemary, and steamed green beans.

For dessert we sliced up the amazing lemon cake I had made earlier in the day, with a dollop (x2) of light cool whip. The perfect refreshing way to finish the meal!

My family and both of my grandparents loved the meal as well; my grandpa even commented he would "Come back to the 'Rugg restaurant' anytime!"

We sat around and chatted over coffee for a while, and when I headed back home a couple hours later I was a bit hungry so I snacked on the last bit of 1% cottage cheese to stop my rumbling tummy before bed.


A successful first day of the new year it was!

This morning I was eager to get back into my usual routine. I had my 1/2 clif bar and drove to the gym, where I did 35 minutes on the elliptical and about 35 of my arm routine, adding a couple new moves I'd like to add into my routine. I'll let ya know what they are once I learn what they're called!

Back home I made myself a drinkable breakfast- one of my favorite choco-banana-berry smoothies as well as hot cup of Earl Grey tea to balance out the cold breakfast!

Today I'm getting some more organizing done around my house before I go and pick up my mom from work; she's having car troubles and we're going to get supplies for my sister's birthday cake anyway! Later on tonight I have plans with a few friends, but they're after dinner so I'll be able to post tonight!
