Sundays and Mondays are just so draining!
Last night before heading to bed I had a little snack- a leftover carrot cake cupcake which was fantastic, and the perfect semi-healthy treat to end the night with!
This morning I woke up leisurely and made myself breakfast at home before heading to the gym. My fave oatbran combo- 1/2 cup oat bran, 1 cup soy milk (I usually use skim but I have to say I prefer the sweetness of soy!), 1 tsp ghee, a banana and some cinnamon on top.
Yum! My workout was the usual 35 minutes on the elliptical, 30 minutes of strength- this week I pumped it up to 7 reps of 15. My goal is to move up to 20's by the end of March!! I'm well on my way!
After my workout I started in on my packed food- I had the cheese stick before class.
After class I heated up my lunch- this delicious new soup I found on sale at the store this weekend!
There was a lot more broth than I had expected, I'm used to thicker soups- but it filled me up and it was oh-so tasty! A little spicy, very flavorful. I'd buy this again for sure! I had some grapes on the side to round it out.
For a snack I had this yogurt:
and my "emergency date"!! I think I need to start planning bigger snacks on Monday/Wednesday because I get so darn hungry!
For dinner after Writing class tonight, I had Nick defrost some frozen lean beef and I use a recipe for Smothered Steak sandwiches from Clean Eating magazine. I added my own twist with a little garlic, fresh sub rolls from the bakery at Belmont's and swiss cheese melted on top!
Without cheese:
On the side I had some leftover italian garden salad (romaine, radicchio, tomato, onion, zucchini) with about 1/2 tbsp Goddess Dressing.
Filling and tasty! The boy enjoyed the meal as well. (Although I tried to get him to use Goddess dressing and he didn't go for it. His loss!)
The cupcakes are calling my name... may mean I need a night time snack!!
Off to get my bags ready and so some editing before bed! Should be an early night, I'm wiped!
