Game Night, Work day

I'm so sorry I haven't posted in 24 hours! Game night went way later than expected, and then I worked all day today, had school work to do after and then it was time to make dinner! I'll try and be more consistent with posting, but I have been a busy girl for sure!

I didn't need a snack yesterday afternoon due to a plethora of frosting licks while making desserts for game night!
I made fanastic brownie cupcakes with peanut butter frosting, and vegan carrot cake cupcakes (recipe courtesy of The Happy Herbivore)!

They came out fab, Nick even helped me frost some of them!


We headed up to Providence around 5:30, just in time to arrive and have some appetizers. I had two pieces of sushi to start, and a few tositos with layered dip!


My family decided on Chinese food for dinner, which I'm not a huge fan of but I have to say I enjoyed some of the interesting flavors.
I filled my plate:

Then went back for a tiny bit more, but only ended up eating the veggies.

Throughout the night there was some more snacking- Pirates Booty and a couple bites of Reeses candies.
We played apples to apples and scene it and had a blast!!
For dessert I had one of my brownie cupcakes:

Ohmigosh is this recipe a keeper! Fanastic! Rich, dense and oh so chocolatey!! The pb frosting made it to die for!

I did have a couple extra licks of frosting when I got home, I couldn't resist!

This morning I had a bit of a food hangover and knew I needed to start the day off on a healthy foot.
I made my usual fruit filled smoothie with 1 cup frozen berries, 1 cup nonfat soy, a scoop of Designer Whey chocolate and a big banana.

For the day's food I packed some almonds which I ate mid-morning, a delicious Trader Joe's Indian meal and some grapes for lunch.

For a snack towards the end of my shift I had a pumpkin pie kashi bar (still great!)

but it still didn't hold me. I snacked on a light cheese stick back home.

For dinner I made quite the delicious combo! I used a recipe from Clean Eating for Not-so-fried chicken (marinated in low fat buttermilk, seasoned and breaded & baked), roasted rosemary potatoes with evoo, s&p (and rosemary!) and steamed broccoli. I love this kind of meal- simple, nutritious and tasty!!

So sorry for the less than detailed post. I am exhausted!! I promise to get back to better blogging this week!!
