Evening all!
I hope you all had a good Saturday, I know I did!
I finally got another run in this morning...and I had a running buddy- my sister! I convinced her to go with me, knowing her 9:30 pace is a LOT slower than mine, because I'm trying to train myself to NOT run so fast so I can work on my endurance! She lasted for a good 2 miles, and then I did about another mile and a half myself. It felt great!
When I got back I replenished some electrolytes with coconut water and had half my favorite Luna bar-
Then, I showered and got ready to meet Michelle at The Garden Grille! My sister came with me, and I am proud to say I drove up all by myself with only my dad's directions =) (yes, I am SUCH a Rhode Islander. 40 minutes is a far drive for me!) We started by ordering deeelicious juices- I got a large mango juice, and my sister got a ginger lemonade! I tried a sip and it was very gingery, yum!
The Garden Grille is a fabulous vegetarian restaurant in Providence. If you're in Rhode Island, I highly recommend it for everyone, they have sooo many delicious, flavorful options! For my lunch, I had the wrap special- it was stuffed full of chili glazed tofu, broccoli, avocado, red peppers and mushrooms. On the side were some fantastic oven roasted potatoes!
I ate about 3/4 of the wrap, and all but one of the fries. I had a bite of my sister's- the quesadilla special with sweet potato and soy chicken.
Michelle was SO sweet, and her boyfriend was really cool too! We had a lot of fun chatting about school, and of course food and blogging!! I had a great time =)
We looked at the dessert menu, which was tempting, but we were all too stuffed!
After we said our goodbyes, my sister and I stopped at the Whole Foods in Prov for some dinner supplies. HOLY WOW was this W.F. HUGE and amazing!! I found a bunch of new bars (white chocolate macadamia clif! more PURE! peanut butter cookie larabar!!) and a couple other things I'm excited to feature soon =)
While we were excitedly browsing, my sister and I had "dessert"- 1 sample bite of the 2 bite pecan tarts! Mmm!
This afternoon, I did a good amount of snacking- lunch filled me up, but I got SO hungry!
I had a nectarine-
and then some carrots and pita chips with home made basil parmesan white bean dip (recipe up soon!)
For dinner, I decided to do seafood! My sis and I stopped at the fish market near our house for some fresh bay scallops. I used this recipe and it was perfect! I just reduced the butter by half. Served with a squeeze of lemon and some blanched broccoli. A nice light but filling dinner.
I am wiped from the busy day, but tomorrow I work so I'm sure it will be just as busy!
I'm thinking about digging into a slice of the pumpkin bread Michelle made me, I'm so excited to try it! I'll post again on Monday!
