Happy St. Patricks for the second time!
I just finished stuffing myself full of delicious Irish food!
I spent all afternoon unpacking & organizing, as well as cooking a big feast for the fam!
I had a late lunch/big snack around 2... 1 cup of nonfat cottage cheese (still not a big fan of this kind) and an apple with some almond butter.
Dinner took 3 hours in total to make/cook, but it was so worth it!
Since I was making dinner, I took the easy way out and bought some fresh baked soda bread from the bakery at Belmont's...
I had to have a slice while prepping dinner!
I made my first corned beef...roasted for over 2 hours in brown sugar and Guinness!
I also roasted some veggies- russet potatoes, sweet potatoes, carrots, parnsips and onions in garlic, salt, pepper and nutmeg with a little evoo and some butter.
I also boiled a big cabbage...
For appetizers, we had some Dublin cheese and bread
But I chose to have some cheese with dinner, and a piece of bread after instead:
It was all fantastic, if I do say so myself! I am mostly Irish, so I was happy to pay homage to my Irish heritage with a delicious authentic dinner!

I myself am banned from Guinness due to my procedure, but I am feeling some dessert. A blondie is sounding reeeallly good about now!!
