Green Wonder

That yoga class was wonderful. I felt like I got a really great stretch in, just what my body needed after the stress I put on myself preparing for the party.
Very relaxing, I loved it!

Dinner was fantastic as well; I'm proud to say I made my first real risotto, and it only took about 35 minutes in total!
I made Ellie Kreiger's Garden Risotto recipe; the only change I made was substituting vegetable broth for chicken broth. It still came out perfect... but I realized afterwards I forgot the parmesean! It was tasty regardless. Perfectly creamy and LOTS of veggies to make it super-healthy. =)

Not a whole grain, I know, but I had a healthy portion, because of all the vegetables- about a heaping cup.
On the side I had a Yves Veggie Brat- I love these! Big, vegetarian sausages packed with protein, and only 150 kcal, 5 g fat!
Unfortunately it was so good I forgot to take a picture of my plate before I devoured it all, but I did take a picture while it was in the final stages of cooking:


The risotto had about 230 kcal, 5 g fat.

Total dinner calories ~400 kcal, 10 g fat.

I'll definately be in the mood for a yogurt soon though; probably with my usual tea!

Target shopping for school supplies and "pizza, beer & baseball" night with dad! Not going to be the healthiest dinner I'm sure, but I'll try to be good with portions to make up for it!
Dad's ordering the pizza from this great pizza place that opened recently up the street: the "Blue Wave Pizza Cafe"... my family says it's fantastic, but I haven't had a chance to try it because I've been away! Now I have my chance!
We're also going to break out the beer and be "men"... hehe watching the movie Fever Pitch, one of my dad's faves, because I've never seen it.
I'm in charge of dessert, and I think I want to get some Red Sox ice cream to go along with the theme... I'm just not sure what kind he would prefer. Fudge? Caramel? Mint? Peanut Butter?
