Perfect Foccacia!

WOW. I have never been so proud of myself!
I made the most AMAZING whole wheat herb foccacia bread!

It was incredible… and at only about 125 calories, it is sooo fabulous!
It took about 45 min to rise, but only about 13 minutes baking in the oven to a perfectly crisp golden brown.
Crispy on the edges, chewy and sweet in the middle. With fresh rosemary and thyme… mmm delectable!

I had 1 square with 1 cup lentil soup (together about 300 kcal, 5 g fat)
As well as a side salad of:
-mixed greens
- 3 baby carrots
- 6 grape tomatoes
-1/4 cucumber
- 2 tbsp pom seeds
- a bit of leftover scallion
- 1 ½ tbsp balsamic vinaigrette (cal free)
This was about 125 kcals, estimated.

Whole lunch estimate ~425 kcal, 0 g fat
Yummy, nutritious and filling! C’est parfait!

I’m going to run in about 45, and then start dinner around 3:30 or so.
