Time Consuming!

Nope, I didn’t eat breakfast this late!
Actually, I ate breakfast around 7:45, but I just spent about the last ½ hour planning out Saturday’s details! (Meal preparation, etc)
It worked out well, though- time consuming but I think I have timing down pat, lots of preparation beforehand and it should go pretty smoothly!
We really don’t have too much to pick up before Saturday… I guess Mom and I are probably going to go grocery shopping on Thursday after we take a mall trip; grab the produce, and then the fish Saturday morning.

Anyways, enough about the party!
This morning I had a big, healthy nutrient filled breakfast to hold me over through my run (in about 10 minutes) and through the morning.
I’m going to Pick Pockets for a big ol’ hummus and tabbouleh wrap (already planned!)
Then the doctors, and picking up dinner supplies.
I can not WAIT for this dinner… I’ve been craving salmon burgers, and with all the healthy fat from the burgers, avocado, mmmm!

My breakfast today was ¾ cup egg whites turned into an omelet with ½ cup spinach, ½ cup chopped and sautéed peppers and mushrooms, a few chopped chives and ½ tbsp of organic ketcup- all for about 200 kcal, 1 g fat.
On the side I had 2 vegetarian sausage links for 80 kcal, 4 g fat and ½ the grapefruit I had yesterday as a snack, for 100 kcal, 1 g fat.
Total breakfast calories ~380 kcal, 6 g fat!

Time to run!

I had a nice lunch!
I went for a 35 minute run, came home, and mom and I went to Pick Pockets for lunch…
I chose their “Veggie Wrap” which has hummus, tabbouleh, tahini, lettuce and tomato on a wrap (not wheat, unfortunately.) It was very delicious, and although I’m sure it was loaded with fat; it’s the healthy kind from olive and sesame oils.
I finished every last bite of this, of course!

It kept me full for a while, but my stomach is beginning to growl a bit- probably because there wasn’t too much protein in my healthy wrap. I’ll start making my fries for dinner soon though, and maybe have some fruit!

After lunch, Mom and I headed to the grocery store to get some light wheat buns for the salmon burgers, and we also found some cool new finds… light swirl cheese sticks, laughing cow light garlic and herb cheese spreads (sounds like they’ll be GREAT for a snack on kashi crackers or a mini pita!) and whole wheat bagelbreads… mom and I were discussing the possibility of a healthy tuna melt on those! Yumm! =)

I am also definitely going to start freezing my bread, because I’m just one person and they don’t last long- this will save money, and good bread!

Alright, I’m off to do some more party planning before I make dinner. (I printed all my recipes, now I'm going to put them all in a folder... how organized am I?! hehe)
I’ll definitely blog my dinner before I go to Evie’s, but I know I’ll be having some treats there… I’ll be sure to recap this tomorrow.
