Now I wish I hadn't put down the Volumetrics book I picked up at Border's the other day... I've always loved the concept of eating more nutrient dense, low energy density foods rather than smaller amounts of less nutrient-high energy foods (it's what your body needs!) I think I demonstrated this very well with my amazing lunch today...
I used a smorgasboard of leftovers and made spaghetti squash spaghetti with black beans and sauteed zucchini.... yum!
I used 1 1/2 cups leftover spaghetti squash (110 kcal) with 1/2 cup black beans (100 kcal, 1 g fat) and 2 tbsp tomato paste (as sauce, 30 kcal) and nuked this in the microwave for a minute while I sauteed 1 cup leftover zucchini (50 kcal) on the stove. I added this to my "spaghetti" with a bit of salt-free garlic and herb seasoning, and voila! The perfect big bowl of veggies for lunch.
Total lunch calories ~ 290 kcal, 2 g fat (pretty low- I've got some party room!)
Great alternative to a salad, I used leftovers, and I am totally satisfied! It had a lot of fiber, very little fat though- so I'm sure I'll be hungry in a little bit; I'll probably have some more yogurt, mmm!
As for party stuff, I'm plugging along on preparation!
Mushrooms are cut and stuffed, pie is prepared, I went for my run and now I'm about to prepare a bunch of veggies to be put in later!
