It's not extremely cold in the house, but it's such a yucky, dreary day outside I felt it was a good day for soup!
After cleaning for a bit I got hungry, so I looked in my fridge, and we have so many options I couldn't decide!
For lunch today I decided on 1 cup Pacific Organic Creamy Butternut Squash Soup (100 kcal, 2 g fat) along with a piece of homemade foccacia bread (125 kcal, 3 g fat) slathered with 1 tbsp hummus (25 kcal, 1 g fat). On the side I had 1/4 sliced cucumber and 8 large baby carrots; (So about a 1/2 serving of veggies for around 50 kcal)
This was a small lunch; only ~300 kcal in total, 6 g fat.
That's alright; I'm sipping on a fruit punch crystal light and I'm going to go for a run on the treadmill in a while, then I'll get a good snack in before I go off to work.
I'm probably making myself a simple work dinner; just a soy burger with some vegetables; probably last night's leftover broccoli, and I think I'll top the burger with some tomato and cheese leftover from last night's dinner as well! I like getting creative =)
Now, what shall I attempt to check off my to-do list now?
