So, I call this my "weirdo" salad because it was quite the smorgasboard of leftovers! Plus, my mom looked at me like I was a weirdo when I put it altogether... but it was honestly probably the best most flavorful salad I have ever made. Yum!

In it:
Leftover spring greens with tiny grape tomatoes (about 6) and a couple cucumber slices (50 kcal)
1/2 cup black beans (100 kcal)
1/2 cup spaghetti squash (50 kcal)
3 asparagus spears, cut up (10 kcal)
1 tbsp pom (10 kcal)
On top I had about 1 tbsp basalmic viniagrette (20 kcal)
For a side I had a serving of GIANT baby carrots... about 8 for 40 kcal.
Altogether ~290 kcal.
I'm going for a nice run before grocery shopping and work!
It's a very quick grocery list; I'm only making a few things and we have most of the ingrediants I need... (arborio rice for risotto, lentils for soup, whole grain flour, etc...)
