Woah, the pasta my roommate and friend made was AWESOME! Absolutely delicious, I'm nice and satisfied but I can't help but feel I ate a bit too much... =/ oh, well... it was quite worth it!
Whole wheat pasta with broccolli, green peppers, tofu and a peanut sauce (made with peanut butter, honey, spices)... this was a 3.2 cup container, and it wasn't all the way full. I'm estimating I ate about 2 cups of it. A little much, but I was very hungry... my lack of 2/3 tbsp peanut butter this morning definately made a difference in my satiety! I got pretty hungry during Kinesiology, but I drank some water and held through until I came back and had this delicious dish, with the rest of my cucumber sliced.
Hmm... calorie count? I probably shouldn't even try. To estimate, it was probably 1 tbsp peanut butter, plus some honey... thats probably a good 120 calories or so, 350 for pasta, 50 for veggies, 80 for tofu... it was a good 600 calories, probably more. Plus the cucumber brings my lunch calories to ~650.
I am having a big dinner again tonight, but again it's all healthy stuff... I'm trying one of Jenna (from Eat, Live Run)'s delicious recipes- Quinoa with Taleggio and Spicy Sauteed Mushrooms! Sounds good!
I'm probably also doing some baking... this weekend willl be an indulgent one for sure (going out to dinner tomorrow night!) but I'll work on balance/portion control and get back on track Monday =)

Hey! Absolutely don't beat yourself up about a larger than normal lunch and dinner. At the moment (especially as we are trying to gain slowly in order to be healthier) it is all about balance and Good, healthy food. I really appreciate your focus on balanced meals and not necessarily worrying about calories. I appreciate that you note them because at the moment I find it helps to be mindful of them, but it is great that you do not use a calorie count as your rigid focus or anything. I've been dying to try out that recipe of Jenna's that you're having for dinner, so I cannot Wait to see how yours turns out! All in all it sounds like a fab day- and a great weekend to come. Keep on keepin' on, you're truly inspirational and strong!

Thanks for the encouragement! I know, I TRY to not be too hard on myself, it's just so hard after a couple years of going crazy over every last bite! I know it's all about balance, words right from my own mouth! The recipe was absolutely fabulous, worth every bite... I highly reccomend it! Tasty, filling and healthy to boot =)
