For lunch I hit up the salad bar, and filled my bowl with mixed greens, some tomatoes, cucumber, mushroom, carrots, a couple pieces cauliflower, onion, some roasted red peppers, a whole bunch of kidney beans, and I threw a hard boiled egg in there for some added protein- I just ate the white. Unfortunately, they didn't have balsamic vinegar hanging around like usual, so I opted for about 1 1/2 tbsp (estimated) viniagrette instead. I also had an apple on the side. It was basic, but healthy and yummy!
Eventually I made it back... and now I feel a bit hungry. Hmm. I just ate an hour ago, I thought I had enough protein/fiber to fill me up, I guess not. I might have a light snack in a bit to hold me until dinner. I'll keep you posted, time for some chem... =/
