I know what you're thinking: "Can't you try something new Kristin?" Well, a. I'm a creature of habit, and b. This is quick, easy, delicious, nutritious and I have all the ingrediants... why not repeat my fave easy dorm recipe and fake chick'n parm? Sure, I had it last week. This is a new week! Tomorrow night I'll be having something interesting at the Valentines dinner (at Hope) and next week I'll surely include something new! =)
For dinner tonight I made myself (can you guess?) Faux Chick'n Parm, with 1 boca meatless chicken patty, topped w/ 1/4 c Nature's Promise Organic Marinara sauce, and 1 slice Sargento Reduced-Fat Provolone, as well as 2 cups "california blend" mixed veggies (I heated these up at my house this weekend to have with dinner this week!). Yummy and filling, should hold me through yoga tonight!
Dinner was ~350 kcals.
I did get a good amount of work done this afternoon; however it took me a longggg time... I was sitting in my room for almost 3 hours doing my Pre-Lab and chem reading! Crazy!
I snacked on 7 kashi crackers w/ 2 tsp each PB and raspberry jam, ~170 kcals.
The rain seems to have died down, which is good...won't be too bad walking to the car for yoga.
I'll probably have a snack later tonight after yoga, then it's more studying until bed! Tomorrow's going to be a long day for sure, but hopefully it will be topped off with a nice Valentine's dinner with friends =)
