I am STUFFED.
But it was allll healthy, so no guilt!
I made my family a delicious Irish feast- Vegan "Corned Beef and Cabbage" and roasted potatoes with dill from Fat Free Vegan Kitchen. I followed the directions exactly, except I used TWO packages of lightlife steak strips (I love 'em!) and I used baby red and white potatoes with the dill/salt for roasting. It was fantastic!
Cooking up:
For an appetizer we had some wheat cracked pepper water crackers with dubliner cheese (not healthy, but a once a year treat):
I had 4 crackers and 3 pieces of cheese.
For the record, I also had a couple sips of red wine while making the sauce.
Dinner was great; I put the "Corned Beef/Cabbage" on a big platter (and saved a HUGE plateful to bring to my dad at work) and doused it in the prepared "gravy" (made with the leftover seasoned broth, red wine, water and some wheat flour for thickening) and served it alongside the roasted potatoes with some horseradish sauce for dipping (So spicy but sooo good- I had about 1 tsp, not pictured)
I ate this whole a big plateful, along with SECONDS of the beef/cabbage! Absolutely delectable, and totally healthy (besides the cheese).
I'm VERY full, but it was worth it.
I'm going to bring my dad his big portion for dinner at work, and then later we're going to have a green-themed dessert and treat when my sis comes home from dance later tonight =)
