Nothing special for lunch or dinner today, sorry guys- I've been running around as usual on Sunday, I ran in the morning- just an easy 30 minutes on the treadmill.
Then I had work 11-4; so I snacked on a Ginger Snap larabar around 11:30 to hold me until my lunch at 2:15- I packed some seasoned tuna, leftover broccoli (2 cups) and some kashi crackers (the rest of the bag; about 12).
This held me nice until after I grabbed some basic groceries (fruit, reduced-fat colby jack cheese for sandwiches, bell pepper for salad/pitas, cottage cheese...) and headed back to the dorm.
For dinner I cooked up a microwave meal I grabbed at Whole Foods and had been wanting to try... Seeds of Change Risotto Portabello di Milano. It was very satisfying for a small bowl; risotto made with brown rice, a few pieces broccoli, bell pepper, and topped with a yummy parmesean-portabello sauce (two of my faves!). For some added veggies I had some leftover steamed carrots from dinner last night, with a sprinkle of fresh pepper. Quick and easy, but fine for a Sunday night!

I'm going to get some work done now- I didn't do too much the last couple of days, but I'm pretty tired because I couldn't fall asleep last night... I think it was the wind- so I'm going to get to bed slightly early tonight to get some rest before my last week at school before spring break!
