Yet another different lunch mix today, I'm trying to use up all the food we've got in the house because we need room for easter recipe ingredients as well as leftovers tomorrow, so I went with some more leftovers for lunch. I had what was left (a small/medium bowful) of our irish "corned beef and cabbage" feast, although there were only a couple pieces of "beef" left in the mix and it was mostly vegetables. Still yummy though, I love the "gravy"! On the side I had 1/2 cup of chive cottage cheese with some kashi crackers (1/2 a serving) to dip- cottage cheese and crackers has always been one of my favorites- and a pretty big apple. Yummy and balanced (veggies, protein, dairy, grains, and fruit!), not bad at all!
My saturday lunch plans got turned into wednesday dinner plans so that's why I ate here at the house- I spent the morning getting some easter stuff and packing done, so I held off on running in the morning- I'll probably run this afternoon, and then I'm making Veggie Sloppy Joes for the fam again tonight, I can't wait to take leftovers back to the dorm with me!
