There's no place like home!

I apologize for the long overdue post, I'm finally home but it was a very busy time getting here! Well worth it though, I love being able to relax. I got back from class this afternoon and immediately packed up the rest of my stuff and loaded up the car. I was SO ready to leave! My mom and I grabbed luch at my favorite healthy mexican restaurant, Tio Mateos, right on campus before we left. I had my fave- the veggie burrito on a wheat tortilla. It was stuffed full of delicious black beans, corn, tomatoes, onions, squash and zucchini, as well as a bit of fresh cheese. Sooo veggie filled and yummy! A bit too much oil for my liking, but they use veggie oil so it was healthy fats for the most part. It was served with salsa, which I ate all of, and some sour cream, which I used about half of (just dipped my fork in a bit and put it on my burrito for flavor). I nibbled on a few of the tortilla chips, but the delicious burrito filled me up!



My burrito filled me up so well I didn't even need and afternoon snack (we ate later in the afternoon as well). After lunch we headed to grocery shop for the week. We hit up not one, not two but THREE grocery stores tonight (I was in heaven!) and got a BUNCH of great deals!! I got all the staples I needed, tons of fresh produce, plus a couple cool new things like Nature's Path Flax Granola Bars (like the granola but in bar form!), I found luna tea cakes to try, and I got a good price on nutritional yeast! Oh, the things that excite me ;)

For dinner tonight I made my family a delicious fish meal, since it's lent and they don't eat meat on Fridays anyways! I roasted salmon filets with fresh tomatoes (rubbed the salmon with some olive oil and a spice blend, drizzled with lemon and cooked 20 mins at 450 degrees) topped with a balsamic reduction and capers (a great touch, I must say!). For sides I sauteed some asparagus in evoo and garlic with fresh squeezed lemon and thyme, and cooked up a whole grain pilaf blend for a yummy grain.
It was absolutely delicious, and very filling! My sister cleaned her plate, the girl who claimed salmon is only "ok" and "hates asparagus". I think that means a meal success!


It was SO nice to be back in the kitchen. I'm out and about a lot this weekend, but I have great meals planned for Monday, Tuesday, Wedesday AND Saturday, plus easter! So excited!
Now I'm about to watch the new movie I got, relax with some tea and a nutritional book, and probably have one of the treats I picked up at the store on a whim... I'm sure it will be yummy, You'll have to wait and see what it is! =)
