What a wonderful feeling it is to be DONE with Organic Chemistry lab... forever!
It was an interesting lab, I must admit. But there was a whole lot of work involved, that I most definately will not miss.
I walked out of both my chemistry exam and lab final feeling pretty confident. My lab final was definately challenging, but I studied hard, so I hope I passed.
I had the good fortune of getting out of Philosophy a few minutes early today, so I had a bit of extra time to study, and I got to chat with one of my best friends who I see in between our classes, so that was a nice distraction from worrying about my upcoming exams. I had lunch in between; hickory smoked tofurky in a wheat pita with some spinach, cucumber and dijon mustard as well as my usual carrots and a medium apple.
My chem exam went surprisingly well, I was in and out (I hope thats a good sign!) and I spent the time I had before my final outside enjoy the warm weather and beautiful sunlight! I snacked on a pecan pie larabar to hold me through my test.
After I finished my exam and breathed a sigh of relief, I was starting to get hungry and after all the work I've done today, I didn't really feel like putting much effort into making an extravagant dinner (not that I can do much with the few things I've got stocked in my dorm!) so I decided to stop by my univeristy's corner store to see what their healthier options were.
I was pleasantly surprised to find a whole new organic section (small, but nice to have!)!!! I was so excited, I picked up some raspberry granola for breakfasts, forty spices hummus, a couple of Amy's organic frozen meals for quick dinners, and I just HAD to grab the organic dark chocolate cherry bar for only $1!!!
I left the store with a baggie full of goodies and some dining dollars well spent! (I've got a whole lot left, and only a couple weeks to use them up. Guess I know what I'll be spending them on!!)
Upon arrival back in the dorm, I chose to heat up one of the Amy's Organic frozen meals for a quick dinner. I picked two vegan meals to try- tonight I went for the Non-dairy Baked Ziti. It was very good, with a creamy tomato sauce and peas- reminded me of the kind of meals I used to eat as a kid. On the side I also had the rest of the garlic steamed cauliflower I made the other night (1 cup). A nice, comforting dinner!
Not the most photogenic, but yummy!
Like a kid again!
I think it goes without saying I am DONE with work for the night, so I'll just be relaxing around for a bit, and hopefully taking that fro-yo trip with Danielle later in the evening! I'll be back for dessert either way!

I KNEW you'd make it through that lab and exam - hooray!!! DEFINITELY take the night off, girl - celebrate! :0)
LARABAR!! Pecan Pie is actually one of my favorite flavors.
I used to eat that Amy's baked ziti all the time!! I'd bulk it up with lots of spinach, broccoli, garlic, and asparagus :0)
