Hola!
Since I will be in an exam around dinnertime on Monday, the real Cinco de Mayo, I decided to celebrate early by making a very un-traditional Mexican meal for my family tonight! Let me tell you, it was absolutely fabulous. Beans, corn, avocados, tortillas and spices galore... this Bean & Corn Tortilla Lasagna from ED&BV was to die for! I had so much fun throwing it all together, and then just popping it in the oven to reveal a delicious one-dish meal, topped with blue corn tortilla chips and vegan cheese- it was sooo easy!
My Mom told me she wanted me to make it again, even before she finished her slice!!
On the side, I prepared a salad of spring greens with some zucchini, diced tomato and black olives tossed with ED&BV's Cumin-Cinnamon Viniagrette- my new favorite dressing! The tangy flavor is unlike anything I've ever tasted. I had two helpings (only one is shown below)!
Such a satisfying meal, and so simple- perfecto!
This afternoon my sister helped me grocery shop (I picked up some fresh veggies and fruit, some soy yogurt and a couple clif bars for the week) and then I came home and had a few mixed nuts and some dried kiwi for a snack.
I'm off to study some more, Philosophy time!

Your dinner looks fabulous and delicious, Kristin, and I will definitely give that recipe a try once I get home... especially since hearing such rave reviews from you and your mom.
It's nice that you get to go home on the weekends. Do you live nearby your college? I get to go home next Saturday and I can't wait.. but a ton of finals stand in the way before summer begins, lol.
