Flavorful Sammie

I'm loving this Italian Deli style tofurky, it really wakes up a basic sandwich with so much flavor! Today I made my sammie witha serving of the tofurky, a slice of vegan mozzarella, some spinach leaves and whole grain dijon mustard on Rudi's honey sweet whole wheat. On the side I had a handful of assorted fun colored mini tomatoes, some snow peas and a pink lady apple. Got all my food groups in, so I was extremely satisfied!

Still haven't worked out yet, I'm taking advantage of having the time to work out mid-day when I have the most energy, I'll be back to my morning routine next week when my schedule gets busier.
I'm off to work after my run, so I'll be posting the rest of my meals late!

The tomatoes are so colorful! And I didn't get to tell you this morning but I love the new bowl. Little things like that can really spice up a meal!

I thought you might be interested to know that I start my running routine on Monday. You answered a question I asked about how you began so I wanted to tell you, I'm really excited. I'm following the beginner's plan from this month's Runner's World :)

Thats great! Good luck with running, I wish I could be running outside right now but the weather hasn't been cooperating =(
