Hot out of the oven, right into my belly!

Ohmigosh I just ate two of the most delicious, soft vegan chocolate chip cookies I have ever eaten. After a substantial amount of dough licking, I had intended on eating just one cookie... but for the second time tonight the flavor in Happy Herbivore's tester recipes got the best of me, and I just had to go for a second! I guess my self control isn't up to par tonight, but boy oh boy were these splurges worth it.

These are sooo good! I don't know how she manages to make such fabulous recipes ever single time. I will be making another batch soon, because the 14 I made are already half gone. My mom said she "just devoured two cookies SO FAST!" they were so good, and my sister was practically dancing with glee when eating hers! She was so excited when I told her it was ok to have a second. Hey, the only fat's from the vegan chocolate chips! (But I did put in a LOT of chocolate chips! Again, that self control... hehe)

Cookie 1:

Cookie 2, plus the last strawberries in the house:

Settling in with my book again tonight. I love the relaxation I've been getting while at home, but I am anxious to see my friends soon! It seems even though most of us are out of school, we're still busy bees with work and family! I think I'll get to see them this weekend, though. For now I'll have to keep myself entertained with cooking and my amazing book!
