It's been a while since I've had nothing to do on a Monday, so I can tell this is going to be a nice start to the week! I have no plans during the day but trying a new recipe, working out and starting a new book! I might see friends later this evening. To start my easy day, I had a big bowl of swiss oats I prepared after work last night (the usual, 1/2 cup oats, 1/2 cup vanilla soy milk, some dried cherries, walnuts, cinnamon) soaked overnight and added 1/2 cup plain soy yogurt, a big banana and a squirt of agave nectar this morning. On the side I had a few strawberries that were ready to go- but I grabbed 'em before they were gone!
It was the perfect filling breakfast to start my morning, and for lunch I'll be trying a new tester recipe, so I'm pretty excited about that! I love summer break =)

Can't wait to see which recipe you're trying out for lunch!! Happy Monday (it definitely feels great not having tons to do - especially school-related stuff!)
