Perfect Start

Wow. I don't even think words can properly describe how deliciously sweet, creamy, satisfying and tasty my bowl of oats was this morning. The best breakfast I've had in a loooong time, and I usually have pretty darn good breakfasts! What a great way to start out a stressful day.
I made myself Vegan Swiss Oats, and I have to say- I like them even better than the non-vegan version!
Last night I combined 1/2 cup regular oats (not instant) with 1/2 cup vanilla soy milk, threw in a small handful each of dried cherries and chopped walnuts, some cinnamon, mixed it all together and let it chill in the fridge overnight.
This morning I woke up and had 1/2 a mini whole wheat bagel with 1 tsp each almond butter and raspberry jelly, and went on a nice 40 minute run outside (no rain this morning!).
When I returned, I took the bowl of oats out of the fridge, and they had absorbed all of the milk and were already creamy and delicious-looking!

I proceeded to add 1/2 a small container of plain soy yogurt (approx. 3 oz), a HUGE banana sliced up, and a drizzle of agave nectar.

Ohmigosh, soooo good! I urge you all to try this asap, you won't be disappointed!
Today is definately not going to be my favorite day, I can already predict that- but hopefully both exams won't go the whole three hours, I can have lunch in between and be home at a decent time to get some studying done this evening.

Here goes my first exams...

Ironically, my bowl of oats this morning was particularly tasty as well!! I guess we deserve to have exceptional breakfasts, with all the studying ;0)

What a delicious breakfast! I have tried overnight oatmeal, but I have never added the soy yogurt and banana. I bet it's amazing...thanks for the tip!

This looks scrumptious!! Will definitely try this one at home.. and the fact that its vegan? Makes it twice as appealing!

I was wondering, I've only had Silk Vanilla Soy yogurt in the past, is the plain version good as well? Is it sweet or is it.. plain? lol.. thanks!

And congrats on getting halfway done with exams! Almost there...
