Early for Ali

This afternoon, I was in the mood to bake; so I decided to give Tina's Oatmeal Raisin Bars a try; I made them a bit lighter (although they were already healthy!) by using egg whites instead of eggs, and 1/2 oil, 1/2 applesauce.


They came out great- says my sister! She ate a whole bar, I saved mine for tomorrow- but I did have some scraps as a snack!

I went out to run a couple errands with my mom, and we were discussing dinner- my sister wanted to eat dinner, but she had practice at 6, so in order to eat with us we'd have to eat at 5. I said this was ok; so instead of an afternoon snack, I just had a few olives; and set to making an early dinner.

Last night when I read Jenna from Eat Live Run's post about Shrimp burritos, I KNEW I had to give them a try! I used her basic recipe, tripling it for 3, and I used 1 red bell pepper and 1/2 a green pepper for some color, plus sriracha hot sauce (no texas pete!), and I had some salsa and lime on the side. It was SOOOO good! I ate mine open faced, of course because it was GIGANTIC, and super spicy, but delicious nonetheless.

I was just full enough after this huge, spicy burrito! I spent a while chatting on the phone with my best friend (everything's all cool with her again, thank goodness!) and I decided to make myself a dessert of sorts- 1/2 cup fage yogurt, with some sliced strawberries, and a drizzle of agave. Sweet and delectable!
