Tofu Salad 2

This morning I had a small snack of about 1 cup of grapes, and then did a short workout- 20 minutes walking on the treadmill at a steep incline, and 10 minutes of abs- my friend invited me to go for a walk on the beach so I figure I'll get some more cardio in then.

After I finished my workout, I was ready for lunch- so I used some leftover tofu salad with some greens and 2 slices sprouted grain bread to make a tofu-salad sandwich, along with some carrots and peppers on the side. It was delicious, but I can't decide if I'm completely full yet... I might have a piece of fruit to hold me longer.


This afternoon I'll be out shopping for my kids' cooking class tomorrow (It's All-American day- healthy baked mac n cheese) and then I'll be walking with my friend. Dinner is looking like Italian food, I hope so- we all know how much I love Italian!
