Inspired

Tonight's dinner was inspired by the lovely miss Cristin from Eat Like Me at Self.com- the first food blog I ever started reading! I still read her posts today; she seems like such a nice girl, and she is so devoted to her awesome job being a dietitian... AND she has managed to keep an incredibly balanced diet throughout her first pregnancy! She herself is an inspiration for sure!

For dinner I threw together a pasta stirfry with two of my favorite vegetables, and a new ingreident I found- sundried tomato chicken sausage. I love sundried tomato and basil to death, and I'm always looking for a new lean protein source, so I picked up some Al Fresco brand all natural, preservative free "sausages" to use in a dish. They're high in protein and low in saturated fat, which is always good for a meat product! To start my stirfry I drizzled some EVOO in a pan along with two minced cloves of garlic, added some steamed broccoli, sliced red pepper and sliced chicken sausage along with some oregano, pepper, red pepper flakes and a dash of parmesan cheese. I cooked this all together and then threw the pasta (whole wheat rotini) in at the last couple of minutes to have all the flavors meld together- I covered it with tin foil for a few minute to enhance the effect. WOW was it good! I made a huge portion- two boy sizes and one and a half Kristin sizes. Seriously, it was so good I went for seconds! About 1/2 of what you see here was my second plate.

After such a delicious dinner I am still pretty full, I've been doing some work but pretty soon I'll be ready to settle down and get some rest. But not before dessert! Nick is coming over to make me one of his amazing frozen yogurt fruit smoothies for a refreshing treat... I'm quite excited, I'll post pics later!

"Eat Like Me" was one of my first food blog reads as well! She definitely is inspiring!

That dinner sounds awesome, and pretty easy. I had chicken sausage for dinner tonight as well, I don't know what I did before discovering them. They are just so tasty, easy to cook, and versatile!
