Whoops! I ended getting so engrossed in cooking, eating and relaxing on my last night off I ended up skipping blogging!
Sorry guys!
Dinner was... delicious! As usual.
But, the twist was- I tried something completely new and different. I had done some research on bison after it was recommended to me by numerous bloggers/readers- and discovered the amazing benefits of buffalo meat! Lower in calories, fat, saturated fat and higher in protein than beef... I knew I had to try it!
So this past weekend I bought bison burgers to try. Well, silly me decided to take on the burger-cooking task alone, never having cooked even a turkey burger myself...
lets just say I got a little (ok, ask Nick- a LOT... he walked in when I was freaking out) freaked out when I opened the package... and I'll spare you veggies the gory details. But it was gross.
I'm ok eating animals now- as long as I know where the come from, that it was humane, and there aren't any crazy hormones or additives being doused in my body.
Lemme tell ya, this was puuuuuuure meat.
But they came out great! I did them medium well (i think?) and we had them on Matthew's organic whole wheat buns with cheddar cheese, ketchup & dijon. I think next time I'll do what Nick (the meat "expert") suggested and rub the meat for more flavor... but I actually liked it as it was!!
On the side I made a salad with spinach & romaine, radicchio (my favorite! reminds me of italy!) black olives and orange pepper with Newman's Light Italian dressing.
I had two servings of this- my second one with some late-cooking Alexia's all natural rosemary/garlic fries (with more ketchup!)
This dinner was yummy, filling, and oh so comforting! Two thumbs up for bison!
Of course I didn't need a late night snack because my dinner was so fantastic.
This morning I got up later than usual, but still pretty early because I'm meeting my friend Carolyn at the gym in an hour! I think we're doing cardio and then I'm taking her through my fave arm workout =)
For breakfast I made myself a big filling bowl of oats to fuel my workout- 1/2 cup rolled oats cooked with 1/2 cup light soymilk, 1/2 cup water, 1 tbsp PB, a HUGE banana, about 1/4 cup cottage cheese and a heaping tbsp raisins. Mmmm, I'm totally satisfied and ready to get working out!
For lunch I'm about to go pack my standard- turkey sammie, carrots and apple.

yay bison! Even after being okay eating meat, maybe raw red love wasn't quite up there on your 'ideal food preparation' list, haha, fair enough!
Don't feel bad about a break from blogging (in fact, with 4 concurrent midterms I'm really not trying to feel bad about taking a little sanity break ;)
