Spicy Night

Last night with the boys was quite fun! I made one of Nick and I's favorites- Jenna's Chicken Enchiladas- Tyler had one as well; he likes them but thinks they're too spicy! My one was perfect with the side of spicy rice and beans (white rice, black beams, cumin, paprika, garlic, oregano, onion, chili pepper, cayenne, a drop of tabasco and Nick added some crushed red pepper)- the boy needed two for his monster apetite! So dinner was quite satisfying!

After dinner we sat around and relaxed for a while, we were all done with work for the week so we spent the night playing dice games and having fun- no more studying for the group of us! I went to bed late but it was worth it after a fun, stress-free night!

Yesterday during the day I went to the gym with my friend Carolyn; it was raining so we didn't run outside; but opted for the indoor track instead. We started with a warm up walk (1 lap), then ran a mile and a half (9 laps) before cooling down by walking another 4-5 laps (lost count!) so we did about 2.5 miles in total of cardio, before heading to the mats for some stretching, and then Nick met us at the gym where he taught me an awesome new tricep exercise and helped me conquer my fear of the assisted pullup/dip machine- now I'm addicted!

This morning I headed to the gym as well, because although I did strength 2 days in a row (not a good idea!) I still need to start off my day with a refreshing workout. I had the best pre-workout snack (in my opinion), 1/2 a clif choc chip PB bar, and then did 30 minutes on the elliptical and 25 minutes of strength. Breakfast in the car was another one of my scrumptious pumpkin muffins (I can't decide if I like these or the apple ones better, I think it's a tie! Yum!)as well as a banana and a 0%chobani.

For lunch I packed Italian tuna again- 1 can chunk light tuna with 1 tbsp Newman's Own light Italian dressing, and a salad of romaine and spinach with tomatoes to throw it over. I brought a pear and some carrots for the side. I couldn't decide on a snack so I packed a Cinnamon Roll larabar and a Pure Protein bar- depending on how hungry I am, I'll let you know what I choose!

Tonight I am being taken out for dinner, which I am very excited about- I have the best boy =) [I wonder if he ever reads the blog and knows how much I talk about him...hmmm...hehe] I haven't gone on a nice dinner in a while! Not sure where we're going, but I'll be sure to fill you in on it later in the evening or tomorrow morning!

**EDITED TO ADD: I'm waiting for Nick to pick me up, I think we're going for Italian... yum! I chose the Larabar for a snack, and it held me throughout the afternoon, a quick impulse grocery shopping trip, stopping by work and an eyebrow wax! Whew, I'm just starting to get hungry now, I can't wait to eat dinner!

And, unfortunately no pics from the day- they didn't come out! I have the worst luck with technology ='(

That italian tuna sounds great. Personally, I can't stomach mustard, so it sounds right up my alley- thanks for the idea.
