Sweet and Savory

Today was another average Sunday, with some new food twists! I tried a new waffle topping for breakfast- Cottage cheese! I topped 2 Kashi Go Lean blueberry waffles with about 1/2 cup of cottage cheese and a drizzle of maple syrup. On the side I had my mandatory banana.

SUPER tasty! I'll definately try this combo again, it filled me up for my usual 3 hours, at which point I started in on my lunchbox of food for the day:

I packed almonds, which I ended up eating mid-morning, Lentil soup and carrots which I had in the afternoon for lunch and a home made pumpkin muffin which I ate around 3:30 before working out.
I had planned to meet my friend Carolyn for a gym workout, but she ended up being too busy to meet me, so instead I opted for an easy 1 hour walk on the seawall with my mom, and my pekingese Kahlua!
We had a nice time chatting and watching Kahlua make friends with everyone he met =)
We walked on the beach for a while as well- it was Kahlua's first time in the sand, he got a little messy!

It wasn't too strenuous- Kahlua's still a puppy and doesn't run very fast, but at least I got some activity in.
I came home, showered and made myself a delicious dinner, inspired by the lovely Caitin at See Bride Run- an apple/cheddar/chicken panino! I pan seared a 4 oz piece of chicken breast in cooking spray until it was cooked through, and topped an Arnold's sandwich thin with some dijon mustard, the chicken, a slice of reduced fat cheddar and thinly sliced gala apple. I squished it all together and put it back under the stove under a "weighted" (read: can of black beans in pot) pan and flipped it once to get a hot, toasty panino! YUM! This combo was sooo great, sweet and savory! On the side I pumped the phytochemicals with a spinach and tomato salad drizzled with balsamic vin and the rest of my apple. So satisfying, and quick and easy for a Sunday night!


I'm doing some research for my eggs project now- is it weird to admit I'm having fun with this? hehe

Is that cottage cheese whipped? And there's nothing quite like a grilled sandwich panini extravaganza! Great luck with the project :)
