Spicy and Sweet

After spending the afternoon organizing I worked up quite the appetite for dinner!

I did snack on 3/4 cup 1% whipped cottage cheese in the afternoon.

I decided to use a recipe I found in the new issue of Fitness Magazine (it's a great issue- I highly recommend it!), The Buddha Stir Fry. I quartered the recipe and used shrimp in place of tofu. Other than that, besides adding a few sesame seeds for an extra somethin' I followed the recipe.
It came out great! Full of fresh veggies and a savory, spicy sauce, it was a really great simple meal I'm sure I'll use again!

After such a spicy dinner I knew I wanted something sweet for dessert to balance it out.
I had saved an extra peanut butter chocolate cookie from the batch my sis and I made the other night, so I heated that until it was warm and oh-so-squishy and had it along side the other half of my grapefruit from last night for some extra fruit.

I'm really really trying to be good about eating as healthy as can be for a few days, because both my grandpa and Nick have birthdays this week, which means party food and dessert... and I'm still working on getting back into pre-christmas shape! I think I can do it!
