Passionate about food

Whew! Just got back from my amazing writing class, came home, whipped up a quick 'n tasty fritatta for the boy and I, shoveled it down while having a phone convo with my mom-no worries, I didn't talk while chewing! ;)

And now I'm finally. sitting. down.
More work, work, work today!!
Preparing for this exam has been challenging, because I KNOW I know the material but I'm so nervous because it's the first one!!

I made myself a brain fueling breakfast of my usual oatbran- 1/2 cup oatbran with 1/2 cup soy milk, 1/2 cup water, 1 tsp ghee, a banana, cinnamon/sugar and some dried cherries for some extra sweetness!

After my usual cardio/arm routine at the gym I snacked on a light cheese stick before class. Sports Nutrition was an easy one- talking all about the energy systems which have always interested me, so I understand it! After class was over I was eager to head to the library to try my new lunch:

YUM!!! A little spicy, very soft and chewy and packed with delicious red pepper, corn, onion, blackbeans and turkey, this was a great easy lunch! I love Kashi!

I also had some grapes on the side (hanging out with my cheese stick from earlier!)

I worked throughout the afternoon, only pausing for a couple emails and blog checks. Before I knew it I was hungry again and snacked on this larabar (one of my fave flavors!)

Held me over all through my Writing Workshop today! I'm glad to say my memoir piece went over well- a few thought my dramatic descriptions on food were a bit over the top (and... umm...sexual... can you say food porn??haha) but most thought it descriptive and detailed, which is what I was going for!
Anyone interested in reading it??

Back home I knew I wanted food, and fast- so I made the quickest meal I could think of that was packed with protein and veggies- a fritatta! This one served two:
In a pan, I sauteed 1/2 a zucchini, some onion, 1 garlic chicken sausage and some diced tomatoes in evoo cooking spray until soft.
I added:
4 eggs, beaten with a splash of skim milk, salt, pepper, oregano
let it cook almost all the way and added about 1/2 cup reduced fat mozzarella to the top and broiled it in the oven for a few!
The mozzarella browned njcely and the eggs cooked beautifully, I thought it was great!
Nick had to run out for a meeting so we'll see what he thinks after.

I had mine with 1/2 a piece (1 serving) of whole wheat naan, maybe it doesn't seem like it goes together but I loved the combo of the buttery naan with the savory egg dish!

Tonight is filled with some more studying/organizing, and lots of rest!!

Yo, I would totally read your memoir, if that's cool. Mine would probably contain such passages about food products as well, so don't feel weird, haha.

I know it has been far too long since I've had one!

Ok! I'll bring a copy in for you next time we work together and you can have some fun reading it when theres NO ONE IN THE STORE (because there never is)!
