Happy Sunday!
Did the time change mess anyone up?
Luckily, I had to get up and go to work so I set my clock back an hour before I went to sleep and I was a-ok!
Last night before I went to bed, I had a fruity platter for a sweet, healthy dessert:
When I got up, I started off the day with more fruit!!
A big healthy smoothie of 1 cup nonfat soy, 1 cup frozen mixed berries, a scoop of designer whey and a ripe banana.
(I have no idea why the pic is so crooked!)
The day was beautiful but as I said, I had to work =(
I packed some really yummy eats- a big bowl of my mom's faaaabulous Minestrone Soup and some red grapes for lunch, and a Think Thin bar I had 1/2 of mid-morning and 1/2 of mid-afternoon.
Back home, I did some studying and worked up quite the appetite, so I made myself the best simple meal I could think of- poached eggs!
I had two poached eggs topped with sea salt and pepper, on top of a toasted multi grain Arnold's sandwich thin. On the side I had some raw veggies- pepper, carrot and snap peas along with the BEST new hummus!! Seriously guys, if you have a Trader Joe's near you try this hummus- Sundried Tomato and Basil, my new favorite, hands down! I had a couple tablespoons worth of hummus with the veggies, as well as a couple finger-fulls... soo good!
Tonight I plan on doing some more studying, and getting to bed early- the time change made me tired!!
Have a great night all!
EDITED TO ADD:
A girl can't finish her weekend without dessert!
I had 1/2 a juicy pink grapefruit...
and a Caramel DeLite G.S. Cookie!
Okey, time to brush my teeth, wash my face and curl up with some inspiring reads.
I just picked up Eckhart Tolle's The Power of Now.
Any of your read this? So far it's really great, I love his philosophy!
